I’m not sure about you, but I’m someone who likes to have my chicken coated in something like marinate or seasoning if I’m going to re-heat it for my lunches at work.
I found this recipe in a Clean Eating Forum last year and I tried it out and have been using it ever since. The chicken tastes amazing fresh or re-heated for lunches!
1 Cup Almond Meal
1 Teaspoon Ground Chilli
1 Teaspoon Paprika
1 Teaspoon Garlic Powder
1/2 Teaspoon Thyme
1/2 Teaspoon Pepper
1/2 Teaspoon Salt
2 Chicken Breasts
Olive Oil or Coconut Oil
Mix all dry ingredients together in a bowl and cover your chicken in the seasoning. If you want, you can beat a raw egg and cover the chicken with the egg before you dip it int he seasoning, but I do find it works just as well without the hassle of the egg if you are in a hurry.
This chicken is perfect to put in healthy wraps or have with vegetables. My favourites are in Summer to have it in a wholemeal wrap with some light cheese, bacon and spinach with a dijon mayonnaise (pictured below) In Winter I love to have the chicken with mashed sweet potato and vegetables like peas, corn, broccoli, carrot and cauliflower.
Another thing about this recipe is that it is CLEAN! Meaning theres nothing processed going into your body! It is extremely healthy!
